Cheesecake debacle -- help

This was supposed to be a congratulatory post on how cool and porny my indian spiced pumpkin cheesecake was. Alas, no.

Instead my mother and the entire family were smoked out of our house yesterday when the cheesecake released probably close to a cup of slimy sweet fluid out of the bottom of the springform pan while it was baking. It got all over the oven, and smoked like a bonfire. We ended up hanging out on the deck and reassuring the neighbors that they really, they didn't need to call the fire department.

Now, I know that part of the debacle was that I didn't realise that springform pans don't contain liquids very well, but in my defense, the 'batter' was pretty dense when I put in in. But I'm still trying to work out what the hell the slimy goo was... I don't understand how it could have been a random clear fluid when everything that we put in the cheesecake was milky -- cream, eggs, cream cheese, and sugar. My going theory is that it was from the 1 package of 'reduced fat' cream cheese that we bought in error and used because the grocery store at 9:00pm the day before T-Day makes Mos Eisley Cantina look like Gymboree. My husband thinks it's because we dispensed with the water bath.

At any rate, there is a happy ending: We pulled the cheesecake, put the oven on it's self-cleaning cycle, and tried again in the morning with tinfoil over the pan to contain any leaks. The cheesecake looks perfect, and smells divine. Even if it is now a *smoked* pumpkin cheesecake. (Don't worry, there's a chocolate mousse tort as a backup dessert.)
