Recipe & relieved

Meanwhile back at the ranch...
I had dinner with my dear friend Keith and he met my roommate K, (the author secretly thinks they'd be a good match!) He he he. Lemme be yo' yentl, dude!

Keith's favorite dinner at my place...
Italian Sausage Soup
One pound hot italian sausage (no wimpy chicken/turkey/tofu substitutes)
Chop and throw it into a big pot. Cook it. Drain off the fat.
Add big canned of pureed toms.
Add 2 Cups of water
Add one cup of brown rice, uncooked
Add a cube of knorr chicken boullion
Cook long enough to cook the rice.
(Add water to thin to your preference-it can get thick & stewlike)
Add one package (big old package) of uncooked, de-stemmed spinach
Let spinach wilt. Serve soup in bowls, sprinkled with mozzarella cheese.
This recipe comfortably serves four...takes about an hour.

Feel free to add hot hungarian paprika or what not to kick up the heat, if you are so inclined

Make a nice salad to go with it, and a loaf of warm toasty bread and a nice glass of some earthy, rich Italian red wine. Yummy.

I know you said no whimpy substitutes, but this recipe looks RIPE for veganizing!

And that just happens to be my favorite past time! Thanks for the inspiration!
