Upside-down bananas foster cake

I just made this cake two nights ago and it was wonderful! I highly recommend this recipe and the book it came from!

Upside-down Bananas Foster Cake
From: The Cake Mix Doctor by Anne Byrn

Serves: 16
Preparation time: 15 minutes
Baking Time: 43 to 47 minutes

Topping:
1/3 cup butter
1 cup packed light brown sugar
1/2 teaspoon cinnamon
2 tablespoons light rum
3 cups sliced bananas, cut about 1/3 inch thick. (from about 3 large bananas)

Alterations that I made:
1/2 teaspoon nutmeg
dash of ginger
the use of dark spiced rum

Cake:
1 package butter recipes golden cake mix or yellow cake mix
8 tablespoons (1 stick) of butter, melted
1 1/2 cups whole milk
2 large eggs
4 teaspoons fresh lemon juice

Alterations that I made:
a few dashes of cinnamon and nutmeg in the batter
lime juice rather than lemon

1. Place a rack in the center of the oven and preheat the oven to 350 degrees F.

2. Prepare the topping. Place the butter in a 10-inch cast-iron skillet and heat the skillet over a low heat to melt the butter. Remove the skillet from the heat once butter it completely melted and, with a fork, stir in the brown sugar, spice and rum. Once combined; using the fork, spread the mixture out evenly in the bottom of the skillet. Arrange the banana slices over the bottom of the skillet so they cover the mixture well.

3. Place the cake mix, melted butter, milk, eggs, spice and citrus juice in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat for another 2 minutes more, scraping the sides of the bowl down again if needed. The batter should look creamy and smooth. Pour the batter on top of the bananas and sugar mixture in the skillet, smoothing it out with the rubber spatula. Place the skillet in the oven.

4. Bake the cake until it rises in the skillet and springs back when lightly pressed with your finger. 43 to 47 minutes. Remove the skillet from the oven and run a long sharp knife around the edge. Carefully invert the skillet onto a heatproof serving plate. (I used a large wooden cutting board covered with tin foil.) The cake should release itself from the skillet. If it does not, simply run the knife around the side of the pan once more and allow the skillet to rest on the plate until the cake releases.

Lift off the skillet, once cake is released. This cake is best served warm, with vanilla ice cream or whipped cream, so slice and serve at once.

If serving this cake later in the day, let it cool on a platter and cover it with plastic wrap. For longer storage, wrap in plastic wrap or aluminum foil and refrigerate for up to 1 week. Slice and serve it at room temperature or reheat it, uncovered, in a microwave oven on high power for about 30 seconds.

That looks amazing. Does the alcohol completely cook off? I'm on medications that cannot mix with alcohol.

Alcohol never completely cooks off from food. Even if you cook something for hours you'll still end up with a small percentage of the original alcohol level. I'd ask your doctor if a tiny amount would affect the meds. :)

I won't risk it then. The meds are for asthma and I have horrific reactions to mixing anything. I can pretty much guarantee bad things involving not breathing will happen. Anyone have a suggestion for a non-alcohoic substitute? I know it won't taste the same, but still...
