I made lunch today



Mushroom sauce wholemeal pasta (sans cream)


What a healthy lunch, packed with fibre, full of nutrients and mushroom goodness!



Ingredients
Makes 1 serving

pasta (any amount up to you)
half cup mushrooms
1/4 cup white wine
1/4 vegetable/chicken/mushroom broth
1 whole small shallot
1 whole small garlic
some olive oil for frying
salt and pepper to taste
sprinkling of oregano & basil spice (or just either)
a pinch of cornflour (to thicken broth)


steps:

1. Heat olive oil in pan (meanwhile boil the pasta)
2. add diced shallots and garlic
3. Pan-fry mushrooms (low-medium heat) for 2 minutes
4. add the white wine and broth
5. add cornflour and a little water to thicken broth
6. simmer for a while
7. pour sauce over pasta
8. add salt and pepper to taste
9. top with some oregano/basil spice
10. sprinkle over pasta with some parmesan cheese

Have to admit I'm not really sure what's in this ... is it merely some boiled pasta with mushrooms?

nope it isnt. it's mushroom sauce :) can't really tell as the color isn't very dark.
