Forbidden Rice pilaf

Something I concocted for Thanksgiving

Take about 2 - 3 c of Lotus Foods' "Forbidden Rice" (a black whole-grain rice grown in China). Cook according to directions, but use vegetable broth in place of water.

Meanwhile peel, seed, and cube 2 small or 1 medium butternut squash. Steam in a steamer basket.

When rice and squash are done, mix them in a casserole dish. Add dried cranberries and seeds from half a pomegranate. Season to taste with garlic salt, black pepper, a little cumin, and splashes of lemon juice. The resulting recipe is vegan, beautiful, and delicious.
